What do I do with all of this kale?

Until the CSA last year, I really thought kale was just something that came under your baked potato at Sizzler. After trying and failing to work with it on my own last year, I tried to hunt down some recipes that would help me make it delicious. Here are links to a few that I am going to try this year.

here's a great kale soup recipe. It's very adaptable and tasty.


1 onion, chopped
2 carrots, sliced
2 cans diced tomatoes
1 bunch kale, washed and chopped
1 box chicken broth (4 cups
1 pkg beef kielbasa, sliced in half
lengthwise and sliced into
half-moons
olive oil
ground pepper if desired

-Saute onions and carrots in a couple Tbs olive oil in soup pot. Add tomatoes and chicken broth and bring to a boil. Add kale and cook till just wilted. Add kielbasa and cook till heated through. Season with pepper. Enjoy!

This is great the next day too.

This soup is also good with diced potatoes added with the broth and cooked till tender and fresh rosemary added toward the end.
